crock pot lovin'.

i got the greatest christmas gift this past year.
it was a surprise... an excellent surprise.
i didn't think i'd get around to using it very often,
but oh, was i wrong.

i have night classes almost daily, so i often come home from school starved.
last week, my roommate amanda and i decided to experiment a bit with my new bff so that we'd have a warm dinner upon returning home from our evening class.
we made up a stellar recipe (if i do say so myself)... kind of a twist on chicken noodle soup and chicken & rice.
you don't believe me? here's the proof!:

to be honest, we just sort of made up the recipe as we went along and didn't do much measuring... but i'll try to give you the most accurate recipe i can!

slow cooker chicken & rice (serves 3)

ingredients:
2 large chicken breasts, thawed
20 oz. chicken broth (check to make sure it's gluten-free... low sodium broth is an added bonus)
4 stalks of celery, chopped
1/2 white or yellow onion, diced
1 cup carrots, chopped
pinch of sea salt
pinch of pepper
pinch of oregano
1 tsp. basil

instructions:
simply pour all of the ingredients into the crock pot. cook on high-6 hours or a medium heat equivalent. our's only cooked for about 4 hours on this setting, and it was perfect. just check to make sure the chicken is not pink, and you're good to go! add more spices to taste/smell. serve over brown rice.

honestly, this was one of the easiest dinners i've made... it's extremely filling with little prep time and an easy clean up. and, it's good for you!
and i ask, what's better than that?!
